Curried Meatballs

Hello!
So I see not many people were too interested in the stuffed cabbage maybe this will catch a few of your interest.  Curried meatballs that I served with peas and carrots over greens. 
Another way to use up that beef I had been given by a friend!! It turned out pretty tasty. 
 
 
 
Curried Meatballs
1 tsp turmeric
1/2 tsp coriander
1/2 tsp cumin
1/4 tsp ginger
1/4 tsp paprika
1/4 tsp cinnamon
1 egg
1 onion, half for in meatballs and half to roast with
2 cloves garlic
1 lb beef ground, or pulse in food processor, turkey would work great for this too!
1 LARGE sweet potato, peeled and cut into large pieces
 
Mix all spices, egg, 1/2 onion and garlic in large bowl, or food processor if need to ground your own beef.  Shape into balls, makes about 20 balls.  Place on cookie sheet that has been sprayed with oil to prevent sticking.  Sprinkle sweet potatoes and onions around the meat balls.  Bake at 375 for about 30 minutes.  They should brown like below. 
 
 

 
You may have notices I eat a LOT of greens.  I love kale, arugula and spinach.  My go to mix.  I added a half cup pea and carrots and ate this as a warm salad with a little of my favorite Braggs Healthy Vinaigrette.  They can also be served with steamed broccoli and a simple yogurt sauce.
 
Yogurt Sauce
1/2 c non fat, unsweetened Greek yogurt
1 Lime, juiced
2 sprigs mint, chopped
1 clove Garlic, minced
Salt and Cayenne Pepper to taste
 
Mix all ingredients in a bowl, this is definitely a sauce that needs an hour or two to sit.  It tastes much better after it has had time to "mingle" ;) So best if made before the meatballs so it can sit in the refrigerator.
